Search for waiter pay in Jordan and Google gives you a 2011 news story, a footballer's Wikipedia page, and a job description quoting Egyptian wages. The salary sites that do name a figure put a waiter at around 530 JOD a month — higher than almost every real ad in Amman.

Minimum wage is 290 JOD, fixed until the end of 2027. A new waiter at a small restaurant usually starts close to it.
Where you work. Hotels, malls and big restaurants in Abdali and around the circles pay the most. A small neighbourhood restaurant starts near the minimum.
Days and hours. Six days a week is standard, seven comes up often, and some ads ask for long days. Check both before comparing two salaries.
Stepping up to captain. A floor captain (كابتن صالة) runs the section and earns at the top of the range. Most captains started as waiters.

On tips: unlike barista ads, some restaurant ads do mention them, sometimes as a monthly share. None states an amount, so we don't count them.
